Chicken & Spinach Pasta in a Cream Cheese Red Sauce

You asked for it, so here it is!  This recipe is so easy and, even though it has cream cheese in it, in my book this recipe is healthy (it has spinach in it, right!?).  Also, disclaimer, if the cooking directions seem funky, it's because I made up the recipe.  I'm not a pro at writing recipes, k?  Here it goes..

Chicken and Spinach Pasta 
*Serves 4

3/4 Box Rigatoni Pasta
4 oz. Cream Cheese
1 can Diced Tomatoes
1/2 Bag Frozen Spinach
1 Tbsp Italian Seasoning (or more to taste)
1 Tbsp Dried Basil (I use the Lighthouse brand)
1 Large White Onion
4-6 Chicken Tenders
Fresh Parmesan
Salt and Pepper to Taste


Dice onion and saut√© in olive oil until clear.  Add can of diced tomatoes, italian seasoning, basil and let simmer on medium heat for at least 15 minutes.  Begin boiling and preparing the pasta and cooking chicken tenders in a separate skillet with olive oil.  Lightly season chicken with italian seasoning.  When the chicken is cooked, dice and set aside to be added later in the sauce.  Once your tomato and onion has cooked for the 15 minutes add frozen spinach and cook until the spinach is no longer frozen.  Add cream cheese and stir in sauce until the cream cheese is fully melted.  Add diced chicken and salt and pepper to taste.  Mix the sauce in with your rigatoni and garnish with fresh parmesan.
